Small Batch Fudgy Brownies: Easy Treat for Self Care

  • Author: Maya
  • Total Time: 50 minutes
  • Yield: 16 servings 1x

Description

These small batch fudgy brownies are a perfect self-care treat, yielding about 16 squares from a single 8×8 pan. They are dense, moist, and feature a signature crackly top, making them an easy, one-bowl dessert ready in under an hour.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter
  • 1 cup (170g) semi-sweet or dark chocolate chips
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 2 tablespoons (10g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • Flaky sea salt (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a microwave-safe bowl, combine butter and chocolate chips. Microwave in 30-second intervals, stirring between each, until smooth and melted. Alternatively, melt using a double boiler on the stovetop.
  3. Let the chocolate mixture cool slightly, then whisk in the sugar until well combined and glossy.
  4. Add eggs one at a time, whisking thoroughly after each addition until the batter is shiny and slightly thickened. Whisk for about 30 seconds to help create the crackly top. Stir in vanilla extract.
  5. Sift flour, cocoa powder, and salt into the wet mixture. Fold gently with a spatula until just combined; do not overmix.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes. The brownies are done when the top is crackly and shiny, and a toothpick inserted into the center comes out with a few moist crumbs attached.
  8. Let brownies cool in the pan for at least 20-30 minutes before slicing to allow them to set properly.
  9. Sprinkle with flaky sea salt if desired, then slice into 16 squares.

Notes

Do not overmix the batter once flour is added to maintain a fudgy texture. Ensure you use granulated sugar, not brown sugar, for the crackly top. Cool completely before slicing to prevent gummy texture. Can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
