Ingredients
- 1.5 cups (150g) graham cracker crumbs
- 6 tablespoons (85g) unsalted butter, melted
- 8 ounces (225g) full-fat cream cheese, softened
- 1 can (14 oz / 397g) sweetened condensed milk
- ½ cup (120ml) fresh lime juice
- 2 teaspoons lime zest
Instructions
- Crush graham crackers into fine crumbs. In a medium bowl, mix crumbs with melted butter until the consistency resembles wet sand.
- Line a 12-cup muffin tin with paper liners. Divide the crumb mixture evenly among the cups, pressing firmly into the bottom and up the sides to form a crust. Place in the fridge.
- In a large bowl, beat the softened cream cheese on medium-high speed until completely smooth and creamy.
- Pour in the sweetened condensed milk and beat on low speed just until combined.
- Add the fresh lime juice and lime zest. Beat on low until just incorporated. Taste and adjust sweetness or tartness if desired.
- Spoon or pipe the filling into the prepared crusts, filling them almost to the top. Smooth the tops with a spatula.
- Refrigerate for at least 30 minutes, ideally 2-4 hours, until set.
- Serve chilled, optionally topped with whipped cream, extra lime zest, or lime wheels.

Ensure cream cheese is fully softened to room temperature to avoid lumps. Use fresh lime juice for the best flavor; bottled juice can taste metallic. The crust should feel like wet sand and hold together when squeezed. These taste better after chilling for a few hours. Do not freeze the finished cups as the texture may become grainy.
