  • 1 ½ cups (150g) graham cracker crumbs
  • ½ cup (113g) unsalted butter, melted
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 ½ cups (270g) semi-sweet chocolate chips
  • 3 cups (150g) mini marshmallows
  • Extra graham cracker sheets (optional, for garnish)
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Stir until the mixture resembles wet sand.
  3. Press the mixture firmly and evenly into the bottom of the prepared pan. Pack it down tightly to ensure the bars hold together.
  4. Bake the crust for 10 minutes until it sets and becomes slightly golden. Remove from the oven.
  5. Immediately sprinkle chocolate chips evenly over the hot crust. Let sit for 2-3 minutes to soften, then spread into an even layer with a spatula.
  6. Spread mini marshmallows evenly over the chocolate layer, pressing them down slightly to nestle into the chocolate.
  7. Return to the oven and bake for 3-4 minutes, or broil for the last 1-2 minutes, watching closely until marshmallows are puffy and golden brown.
  8. Cool completely on a wire rack (at least 30 minutes, preferably overnight) to allow chocolate to harden and marshmallows to deflate slightly.
  9. Lift bars out using parchment handles and cut into squares with a sharp knife. Wipe knife between cuts for clean edges.

Notes

Press the base firmly to prevent crumbling. Do not over-broil marshmallows as they burn quickly. Cool completely before cutting to avoid a sticky mess. Store in an airtight container at room temperature for up to 3 days. Freezing is not recommended as marshmallows may become sticky.
