Description
These chewy s’mores cookie bars capture the classic campfire flavor without the fire. Featuring a buttery graham cracker base, melted semi-sweet chocolate, and toasted mini marshmallows, this easy no-mixer dessert is perfect for parties or a quick sweet treat.
Ingredients
- 1 ½ cups (150g) graham cracker crumbs
- ½ cup (113g) unsalted butter, melted
- ¼ cup (50g) granulated sugar
- ½ teaspoon ground cinnamon
- 1 ½ cups (270g) semi-sweet chocolate chips
- 3 cups (150g) mini marshmallows
- Extra graham cracker sheets (optional, for garnish)
- Non-stick cooking spray
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Stir until the mixture resembles wet sand.
- Press the mixture firmly and evenly into the bottom of the prepared pan. Pack it down tightly to ensure the bars hold together.
- Bake the crust for 10 minutes until it sets and becomes slightly golden. Remove from the oven.
- Immediately sprinkle chocolate chips evenly over the hot crust. Let sit for 2-3 minutes to soften, then spread into an even layer with a spatula.
- Spread mini marshmallows evenly over the chocolate layer, pressing them down slightly to nestle into the chocolate.
- Return to the oven and bake for 3-4 minutes, or broil for the last 1-2 minutes, watching closely until marshmallows are puffy and golden brown.
- Cool completely on a wire rack (at least 30 minutes, preferably overnight) to allow chocolate to harden and marshmallows to deflate slightly.
- Lift bars out using parchment handles and cut into squares with a sharp knife. Wipe knife between cuts for clean edges.
Notes
Press the base firmly to prevent crumbling. Do not over-broil marshmallows as they burn quickly. Cool completely before cutting to avoid a sticky mess. Store in an airtight container at room temperature for up to 3 days. Freezing is not recommended as marshmallows may become sticky.
