Description

These chewy, buttery, caramel-infused blondies are an easy holiday treat that requires no fancy equipment. With a perfect balance of brown sugar sweetness and crunchy toffee bits, they are make-ahead friendly and universally loved.

  • 1 cup (226g) unsalted butter, melted and cooled slightly
  • 2 cups (400g) light brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ½ cups (170g) toffee bits
  • ½ cup white chocolate chips (optional)
  • Sea salt flakes for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease the pan.
  2. In a large mixing bowl, combine the melted butter, light brown sugar, and granulated sugar. Mix vigorously with a fork or whisk for about 2 minutes until smooth and glossy.
  3. Add the eggs and vanilla extract to the butter mixture. Mix until just combined.
  4. Add the flour, baking powder, and salt. Switch to a rubber spatula and fold gently until no streaks of flour remain. Do not overmix.
  5. Fold in the toffee bits (and white chocolate chips if using) until evenly distributed.
  6. Scrape the batter into the prepared pan and spread it evenly, pressing down firmly with the back of the spatula.
  7. Bake for 20-25 minutes, or until the edges are golden brown and the center is just set. A toothpick inserted should come out with moist crumbs.
  8. Let the blondies cool in the pan for at least 15 minutes before lifting them out using the parchment overhang.
  9. Slice into squares and sprinkle with sea salt flakes if desired. Serve warm or at room temperature.

Notes

Do not overbake as blondies continue to cook in the pan. For best texture, measure flour by spooning it into the cup and leveling it off. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months. Adding a piece of bread to the container helps keep them soft.
