  • 8 oz cream cheese (full-fat or plant-based alternative)
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon pure chili powder
  • 1 tablespoon olive oil
  • 12 tablespoons fresh lime juice
  • 1/2 cup fresh cilantro, chopped
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Cut chicken into cubes, mince garlic, and measure spices.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
  3. Add minced garlic and sauté for 1 minute until fragrant. Add cumin and chili powder, cooking for 30 seconds to toast.
  4. Add chicken cubes, season with salt and pepper, and brown for 5-7 minutes until browned on all sides.
  5. Pour in chicken broth, green chiles (with liquid), and undrained beans. Stir to scrape up browned bits.

Notes

Do not rinse the white beans; the starchy liquid helps thicken the chili. Let cream cheese come to room temperature before adding to ensure smooth melting. For a dairy-free version, use plant-based cream cheese and vegetable broth. The chili tastes better the next day as flavors meld.
