Instructions

  1. Preheat oven to 350°F (175°C). If using a new cast iron skillet, ensure it is seasoned; lightly grease if concerned about sticking.
  2. In a mixing bowl, combine softened butter, granulated sugar, and brown sugar. Beat with an electric mixer on medium speed until light, fluffy, and pale (2-3 minutes).
  3. Add the egg and vanilla extract. Mix on low speed until just combined. Scrape down the sides of the bowl.
