Description
A creamy, silken, and decadent vegan chocolate mousse made with ripe avocados, cocoa powder, and maple syrup. This no-bake dessert is gluten-free, dairy-free, and ready in just 10 minutes of prep time.
Ingredients
Scale
- 2 medium ripe avocados (about 300g)
- ½ cup (50g) unsweetened cocoa powder (Dutch-processed preferred)
- ⅓ cup (80ml) pure maple syrup
- 2–4 tablespoons unsweetened almond milk
- 1 teaspoon pure vanilla extract
- Pinch of sea salt
- ½ teaspoon instant espresso powder (optional)
Instructions
- Cut the avocados in half, remove the pits, and scoop the flesh into a high-speed blender or food processor.
- Add the cocoa powder, maple syrup, vanilla extract, sea salt, and espresso powder (if using) to the blender.
- Blend on low speed, gradually increasing to high, for 1-2 minutes until the mixture is completely smooth and glossy.
- Stop and scrape down the sides with a spatula to ensure no chunks remain.
- If the mixture is too thick, add almond milk one tablespoon at a time until it reaches a thick but pourable consistency.
- Taste and adjust sweetness or chocolate intensity as needed.
- Transfer to serving glasses and chill in the refrigerator for at least 30 minutes before serving.
- Top with fresh berries, sea salt, or coconut whipped cream if desired.
Notes
Ensure avocados are very ripe for the smoothest texture. If avocados are under-ripe, bake them at 350°F (175°C) for 10-15 minutes to soften. This mousse does not freeze well; store in the refrigerator for up to 3 days. It tastes best when chilled.
