  • 1 tablespoon maple syrup
  • ½ teaspoon cinnamon (optional)
  • ¼ cup chopped walnuts or pecans (optional)
  • ¼ cup dark chocolate chips (optional)
  • ½ cup blueberries (optional)

Instructions

  1. Peel bananas and break into chunks. If using frozen bananas, blend them directly without thawing.
  2. Add oats, banana chunks, plant milk, baking powder, vanilla, and maple syrup to a blender.
  3. Blend on high for 30-45 seconds until smooth. Adjust consistency with more milk or oats if needed.
  4. If using mix-ins like nuts, chocolate chips, or blueberries, gently fold them into the batter with a spoon.
  5. Heat a non-stick skillet or griddle over medium heat for 2-3 minutes. Test readiness by sprinkling water drops; they should sizzle.
  6. Lightly grease the skillet with oil or vegan butter.
  7. Pour about ¼ cup of batter per pancake. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  8. Flip gently and cook for another 1-2 minutes until golden brown.
  9. Serve immediately with toppings like maple syrup, fresh fruit, or coconut yogurt.

Notes

Use very ripe bananas for natural sweetness and binding. Do not overblend to avoid tough pancakes. Keep cooked pancakes warm in a 200°F oven. Batter can be stored in the fridge for up to 24 hours. Pancakes freeze well for up to 2 months.
