Description

These easy game day sliders feature slow-cooked pulled pork with a sweet and savory rub, topped with a crunchy, tangy apple slaw. Perfect for feeding a crowd without the mess.

  • 34 pounds pork shoulder (Boston butt)
  • 2 tablespoons light brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup apple cider vinegar
  • 1/2 cup chicken broth (low-sodium)
  • 2 tablespoons soy sauce
  • 1/4 cup ketchup
  • 2 medium green apples (Honeycrisp or Granny Smith)
  • 2 cups shredded purple cabbage
  • 1/2 cup mayonnaise (full-fat)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon celery seed
  • 1 package Hawaiian rolls (1215 rolls)
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 2 tablespoons grated Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Trim excessive hard fat from the pork shoulder, leaving some marbling. Pat dry with paper towels.
  2. In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the pork.
  3. Pour apple cider vinegar, chicken broth, soy sauce, and ketchup into the bottom of a slow cooker. Place the seasoned pork on top.
  4. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours, until the pork is fork-tender.
  5. Transfer pork to a large bowl and shred using two forks. Discard large fat pieces.
  6. Pour about 1/2 cup of the cooking liquid back over the shredded pork and stir to moisten.
  7. While pork cooks, peel and core apples. Grate or slice thinly.
  8. In a large bowl, combine apples, shredded cabbage, mayonnaise, 2 tablespoons apple cider vinegar, honey, celery seed, salt, and pepper. Toss to coat evenly.
  9. Slice Hawaiian rolls in half horizontally. Place bottom halves on a baking sheet.
  10. Pile shredded pork onto the buns, then top with a generous scoop of apple slaw.
  11. Place top halves of buns on sliders.
  12. Melt butter with garlic powder and Parmesan. Brush over the tops of the sliders.
  13. Optional: Broil for 2-3 minutes until tops are golden and crispy.

Notes

Do not use pork loin as it will dry out. The slaw tastes better if made ahead of time. Keep assembled sliders warm in a low oven (200°F) or on a warming tray. You can freeze the shredded pork for up to 3 months, but do not freeze the slaw.
