A vibrant, layered iced matcha latte featuring a sweet strawberry puree base, ceremonial grade matcha, and a luxurious vanilla cold foam. This refreshing drink is perfect for weekend brunches and takes only about 15 minutes to prepare.
Ingredients
- 2 teaspoons (4g) ceremonial grade matcha powder
- 1 cup (150g) fresh strawberries, hulled
- 1 cup (240ml) milk of choice (oat, almond, or dairy)
- 1 tablespoon (15ml) vanilla syrup
- 1/2 cup (120ml) heavy cream, cold
- 1 cup ice cubes
- 2 tablespoons (30ml) hot water (approx. 175°F)
- 1 teaspoon honey or agave (optional, for strawberry base)
- 1 teaspoon honey or agave (optional, for matcha paste)
Instructions
- Make the strawberry base: Hull and chop strawberries, then blend until smooth. Add honey if needed. Strain if a silky texture is desired without pulp.
- Prepare the matcha paste: Sift matcha powder into a bowl. Add hot water and optional sweetener. Whisk vigorously in a ‘W’ motion until a smooth, frothy paste forms with no lumps.
- Build the matcha latte: Fill a serving glass with ice cubes. Pour in the milk. Slowly pour the matcha paste over the ice to create a green layer at the bottom.
- Add the strawberry layer: Slowly pour the strawberry puree over the back of a spoon held just above the surface of the matcha milk to maintain distinct layers.
- Whip the vanilla cold foam: In a small bowl, combine cold heavy cream and vanilla syrup. Use a handheld frother to whip until stiff peaks form.
- Assemble and serve: Gently spoon the cold foam over the top of the drink. Garnish with fresh strawberry slices or mint if desired. Serve immediately with a long spoon.
Notes
Use ceremonial grade matcha for the best flavor and color. Keep all ingredients cold to ensure the layers remain distinct and the foam stays stable. Pour the strawberry puree slowly over the back of a spoon to prevent mixing the layers. The strawberry puree can be made ahead and stored in the fridge for up to 3 days.
