  • 2 tablespoons vegetable or canola oil (30ml)
  • 3 large yellow onions, thinly sliced (about 450g)
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth (480ml)
  • ½ cup heavy cream (120ml)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Optional: Fresh chopped parsley or chives for garnish

Instructions

  1. Pat pork chops dry and season with salt, pepper, and paprika. Lightly dredge in flour, shaking off excess.
  2. Heat oil and butter in a large skillet or Dutch oven over medium-high heat. Sear chops for 3-4 minutes per side until golden brown. Remove to a plate.
  3. Reduce heat to medium. Add sliced onions to the pan and cook slowly for 15-20 minutes until deep golden brown and caramelized.
  4. Sprinkle remaining flour over onions and stir for 1-2 minutes. Slowly whisk in chicken broth, garlic, Worcestershire sauce, thyme, and bay leaf. Simmer for 5 minutes.
  5. Nestle chops back into the gravy. Bring to a gentle simmer, cover, and cook on low for 20-25 minutes until internal temperature reaches 145°F (63°C), flipping halfway.
  6. Remove lid for the last 5 minutes to reduce liquid. Remove bay leaf, stir in heavy cream, and heat through for 1-2 minutes. Adjust seasoning.
  7. Serve immediately with extra gravy spooned over the top.

Notes

Do not skip the sear for flavor depth. Ensure onions are properly caramelized for sweetness. Use bone-in chops for juiciness. Rest meat for 5 minutes before serving. If gravy is too thin, simmer longer or use a flour slurry. If too thick, add more broth.
