  • 1 cup Monterey Jack cheese, shredded
  • 1 pound Mexican chorizo
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 cup heavy cream
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Shred the cheddar and Monterey Jack cheeses. Dice the onion and mince the garlic. Measure out spices.
  2. Heat a large skillet over medium heat. Add the chorizo and cook for 5-7 minutes, breaking it up until crumbled and browned. Drain excess fat, leaving about 2 tablespoons in the pan.
  3. Add the diced onion to the chorizo fat and cook for 2 minutes until softened. Add the garlic and cook for 30 seconds until fragrant.
  4. Stir in the smoked paprika and cumin, blooming them in the fat for 30 seconds.
  5. Reduce heat to low. Gradually add the shredded cheese, a handful at a time, stirring constantly until melted before adding the next handful.
  6. Pour in the heavy cream and stir until the mixture is smooth and combined.
  7. Taste and season with salt, black pepper, and cayenne if desired. Serve immediately while hot.

Notes

Shred your own cheese to avoid anti-caking agents that cause graininess. Keep heat low when melting cheese to prevent separation. Do not drain all the chorizo fat as it adds flavor. This dip does not freeze well due to dairy separation.
