Ingredients

  • 34 pounds chuck roast
  • 1 packet (1 oz) dry ranch dressing mix
  • 1 packet (0.95 oz) au jus gravy mix
  • 1/2 cup (1 stick) butter
  • 68 pepperoncini peppers
  • 1 cup low-sodium beef broth
  • Optional: 1 pound baby potatoes, halved
  • Optional: 2-3 large carrots, chopped
  • Optional: 1 large onion, sliced

Instructions

  1. Pat the chuck roast dry with paper towels. Trim any large chunks of hard fat, but leave the marbling. Place the roast in a 6-quart slow cooker.
  2. Sprinkle the dry ranch dressing mix and au jus gravy mix evenly over the top of the roast.
  3. Place the stick of butter on top of the roast. Add the pepperoncini peppers and about 1/4 cup of their brine liquid. If using vegetables, place them around the roast.
  4. Pour the beef broth around the sides of the roast. Do not cover the roast completely with liquid.
  5. Cover and cook on LOW for 6-8 hours, or until the meat is fork-tender and pulls apart easily.
  6. Remove the meat from the slow cooker and shred or slice it. Return the meat to the pot.
  7. Stir in the vegetables if they are not yet tender. Let sit on LOW for 15-20 minutes to meld flavors.
  8. Serve with the gravy ladled over the top.

Notes

For best results, cook on LOW rather than HIGH to ensure the meat becomes tender. If the gravy is too thin, mix 1 tablespoon of cornstarch with 1 tablespoon of cold water and stir into the pot, cooking on HIGH for 15 minutes to thicken. The recipe is high in sodium due to the seasoning packets; use low-sodium broth and mixes to reduce sodium content. Leftovers taste even better the next day.
