  • 3 tablespoons extra virgin olive oil
  • 2 fresh lemons (juice of 1, sliced from the other)
  • 1 teaspoon dried oregano
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • Freshly cracked black pepper
  • 1.5 pounds Yukon Gold or Russet potatoes, cut into 1-inch cubes
  • 1 medium red onion, sliced into wedges
  • ½ cup crumbled feta cheese (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil.
  2. In a large bowl, whisk together olive oil, lemon juice, dried oregano, minced garlic, salt, and black pepper to create the marinade.
  3. Add chicken pieces, potato cubes, and red onion wedges to the bowl. Toss until everything is evenly coated in the marinade.
  4. Arrange the mixture on the prepared sheet pan in a single layer, ensuring pieces are not crowded to allow for proper roasting.
  5. Roast in the preheated oven for 20-25 minutes. Halfway through (around 10 minutes), flip the chicken and stir the potatoes to ensure even browning.
  6. Check for doneness: chicken should reach an internal temperature of 165°F (74°C) and potatoes should be fork-tender with crispy edges.
  7. Remove from oven and immediately sprinkle with crumbled feta cheese and fresh parsley.
  8. Serve immediately while hot.

Notes

Cut potatoes into uniform 1-inch cubes for even cooking. Do not overcrowd the pan, as this will cause steaming instead of roasting. For a dairy-free version, omit the feta cheese. Sweet potatoes can be substituted but may require slightly longer cooking time.
