  • 3 large eggs
  • 1 cup (240ml) milk
  • 2 tablespoons butter, melted
  • 1 pound (450g) breakfast sausage, casings removed
  • 1 cup (100g) sharp cheddar cheese, shredded
  • Optional: ½ cup diced onion, ½ cup diced bell pepper, ½ cup crumbled bacon, 2 tablespoons chopped fresh herbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add sausage and break it up with a fork. Cook until browned and crumbly (5-7 minutes). If using onions or peppers, sauté them in the sausage fat until soft. Drain excess fat and let the mixture cool slightly.
  3. In a large bowl, whisk together flour, baking powder, salt, and black pepper.
  4. In a separate bowl or measuring cup, whisk eggs, milk, and melted butter.
  5. Pour wet ingredients into dry ingredients. Stir gently until just combined; do not overmix. Fold in the cooled sausage mixture, cheese, and any optional add-ins.
  6. Grease a standard 12-cup muffin tin or line with liners. Scoop batter into each cup, filling about ¾ full.
  7. Bake for 18-20 minutes, or until tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid tough muffins. Ensure the sausage is cooled before adding to the batter to prevent scrambling the eggs. For best results, use sharp cheddar cheese. These freeze well for up to 3 months; wrap individually in plastic wrap and store in a freezer bag.
