Description

  • 1/2 cup (120ml) vegetable oil
  • 3 large eggs
  • 1 cup (240g) unsweetened applesauce
  • 2 medium apples, peeled and diced
  • 1/2 cup (170g) honey
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup (55g) unsalted butter, melted
  • 1 cup (120g) powdered sugar
  • 23 tablespoons milk
  • 1 teaspoon ground cinnamon (for glaze)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan thoroughly with non-stick spray or butter and flour.
  2. In a large bowl, combine cake mix, oil, eggs, and applesauce. Whisk until smooth.
  3. Stir in diced apples, honey, 2 teaspoons cinnamon, and nutmeg until well combined.
  4. Pour batter into prepared pan and spread evenly.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While cake bakes, make the glaze: In a small saucepan over low heat, melt butter. Remove from heat and whisk in powdered sugar, milk, 1 teaspoon cinnamon, and salt until smooth.
  7. Remove cake from oven and let cool for 10 minutes.
  8. Pour warm glaze over the warm cake.
  9. Let sit for another 10 minutes to set before slicing and serving.

Notes

For best results, dice apples small so they bake evenly. Pour glaze on while the cake is still warm to help it soak in. This cake keeps well in an airtight container for up to 4 days. For gluten-free, use a gluten-free cake mix. For dairy-free, use vegan butter and almond milk. For vegan, use egg replacer and vegan butter/milk.
