  • 1 cup (120g) frozen spinach, thawed and squeezed dry
  • 3.5 oz (100g) canned artichoke hearts, drained and chopped
  • 1/2 cup (50g) mozzarella cheese, shredded
  • 2 tablespoons (15g) parmesan cheese, grated
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat your broiler to high.
  2. Thaw the frozen spinach and squeeze out all excess moisture using your hands or a clean towel.
  3. Chop the drained artichoke hearts into bite-sized pieces.
  4. In a 6-ounce ramekin, combine the softened cream cheese, squeezed spinach, chopped artichokes, garlic powder, onion powder, and half of the mozzarella cheese. Mix until a thick, chunky paste forms.
  5. Spread the mixture evenly into the ramekin.
  6. Sprinkle the remaining mozzarella and parmesan cheese on top. Add red pepper flakes if desired.
  7. Place the ramekin on a baking sheet and broil for 3-5 minutes, watching closely until the cheese is melted, bubbly, and golden brown.
  8. Remove from the oven and let cool for 2 minutes before serving immediately.

Notes

Crucial: Squeeze all water out of the thawed spinach to prevent a watery dip. Ensure cream cheese is softened for easier mixing. Watch the broiler closely as cheese can burn quickly. This recipe is naturally gluten-free if using certified gluten-free spices and cheeses.
