Description
A rustic, homemade peach cobbler featuring a buttery, drop-biscuit style topping that bakes into a crisp, golden crust over a sweet and tart peach filling. This easy-to-make dessert is perfect for summer gatherings and freezes well.
Ingredients
- 6–7 medium fresh peaches, peeled and sliced (or 2.5 lbs frozen peaches)
- ¾ cup granulated sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons cornstarch
- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 6 tablespoons unsalted butter, melted (divided)
- ½ cup whole milk
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon (optional)
Instructions
- Preheat oven to 375°F (190°C).
- If using fresh peaches, blanch in boiling water for 30-60 seconds, transfer to ice water, peel, slice into ½-inch wedges, and remove pits. If using frozen, thaw slightly to slice.
- In a large bowl, toss sliced peaches with granulated sugar, lemon juice, and cornstarch until evenly coated. Let sit for 10-15 minutes to draw out juices, then pour into a 9×9 inch baking dish.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate small bowl, whisk melted butter (half of the total), milk, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir gently until just combined. The dough should be shaggy and sticky; do not overmix.
- Drop spoonfuls of dough over the peaches, leaving some gaps for bubbling.
- Brush the remaining melted butter generously over the top of the dough balls.
- Bake for 45-50 minutes until the topping is deep golden brown and the fruit filling is bubbling vigorously.
- Let cool for at least 15 minutes before serving to allow the syrup to thicken.
Notes
Do not overmix the dough to ensure a tender, fluffy biscuit topping. Let the cobbler cool for at least 15 minutes after baking to allow the cornstarch to set and the syrup to thicken. If using frozen peaches, do not thaw completely before slicing. For a crispier crust, use a dark metal or cast-iron pan.
