- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 4 cups chicken broth (low-sodium)
- 1 bottle (12 oz) German-style lager or Märzen
- 3 cups sharp cheddar cheese, freshly grated
- 1 cup Gruyère cheese, freshly grated
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- 1/2 teaspoon caraway seeds
- 1 bay leaf
- Salt and black pepper to taste
Instructions
- Prep ingredients: Dice onion, mince garlic, and grate cheese.
- Melt 3 tablespoons of butter in a large Dutch oven over medium heat. Add diced onion and a pinch of salt; cook for 4-5 minutes until soft and translucent.
- Add minced garlic and caraway seeds; cook for 1 minute until fragrant but not browned. Remove from heat.
- Add the second tablespoon of butter to the pot. Once melted, sprinkle in flour and whisk constantly for 1-2 minutes to form a nutty roux.
- Slowly pour in warm chicken broth while whisking constantly to prevent lumps. Add beer, bay leaf, Dijon mustard, and smoked paprika. Whisk until smooth.
- Bring mixture to a gentle simmer and cook for 5 minutes to thicken and cook out raw flour taste.
- Remove pot from heat. Gradually add grated cheddar and Gruyère, stirring constantly until melted and smooth.
- Taste and season with salt and black pepper as needed. Remove bay leaf.
- Serve immediately in deep bowls, optionally topped with extra cheese, paprika, or fresh parsley.
Notes
Grate your own cheese to avoid anti-caking agents that cause graininess. Always remove the pot from heat before adding cheese to prevent it from seizing. Use warm broth to prevent lumps in the roux. Avoid IPAs; use a lager or Märzen. This soup does not freeze well due to dairy separation.
