  • 1 bottle (12 oz) German-style lager, Helles, or Märzen
  • 1 medium yellow onion (about 150g), sliced thin
  • 1 medium green bell pepper (about 100g), sliced into strips
  • 1 tablespoon butter
  • 1/2 cup (120ml) low-sodium chicken or beef broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon soy sauce
  • 1 sprig fresh thyme (or 1/2 tsp dried)
  • 1/2 teaspoon caraway seeds (optional)
  • Salt and black pepper to taste
  • Whole grain mustard for serving

Instructions

  1. Slice the onion into half-rings and the bell pepper into thin strips. Mince thyme if using fresh.
  2. Heat butter in a 10-inch skillet over medium heat. Add onions and peppers, sprinkling with salt and pepper.
  3. Sauté for 5-7 minutes until onions are translucent and starting to brown, and peppers are softened.
  4. Push veggies to the side and pour in the beer. Let bubble for 1-2 minutes to cook off alcohol.
  5. Stir in broth, soy sauce, Dijon mustard, and thyme. Scrape up browned bits from the bottom of the pan.
  6. Place brats into the simmering liquid, ensuring they are mostly submerged. Cover and simmer gently for 15-20 minutes, turning halfway through.
  7. Remove lid and increase heat to medium-high. Reduce liquid until thick and syrupy, spooning sauce over brats frequently.
  8. Cook for another 5-7 minutes until brats are golden brown and liquid is reduced.
  9. Let brats rest for 2 minutes before serving with whole grain mustard.

Notes

Do not prick the bratwurst casings as this releases juices. Use a gentle simmer rather than a boil. If using dark beer, the sauce will be richer; light lager yields a cleaner taste. Leftover sauce can be drizzled over mashed potatoes.
