Description
A two-stage cooking method for juicy, flavorful bratwursts braised in beer and onions, then grilled for a perfect char. This recipe brings the taste of an Oktoberfest festival to your home kitchen with minimal stress.

- 6–8 raw bratwurst links (about 2 lbs / 900g)
- 3 large yellow onions, thinly sliced (about 600g)
- 1 bottle (12 oz / 355ml) lager, pilsner, or Märzen beer
- 2 tablespoons butter
- 1 tablespoon olive or vegetable oil
- 1 tablespoon Dijon mustard
- 6–8 brat buns (brioche, potato rolls, or hot dog buns)
- 1 teaspoon caraway seeds (optional)
- Salt and pepper to taste
- Yellow mustard, grain mustard, or relish for serving
Instructions
- Slice the onions into thin half-moons and set aside.
- Heat oil and butter in a large skillet or Dutch oven over medium heat. Add onions and a pinch of salt (and caraway seeds if using). Cook for 5 minutes until softened and translucent.
- Pour in the beer and add the raw bratwursts to the pan, nesting them among the onions. Bring to a gentle simmer, then reduce heat to medium-low. Cover and braise for 15 minutes.
- Remove the lid and check the brats. Flip them gently. If not fully cooked (internal temp 160°F/71°C), cover and cook for another 5 minutes. Remove brats to a plate.
- Increase heat to medium-high. Cook the onions and remaining beer reduction until the liquid is almost gone and onions are deeply browned and sticky (about 10 minutes). Stir frequently to prevent burning.
- Heat a grill or grill pan to high heat. Brush brats with Dijon mustard and grill for 2-3 minutes per side until charred and blistered.
- Toast buns on the grill for the last minute. Assemble by placing caramelized onions on the bottom bun, topping with a brat, adding mustard, and closing the lid. Serve immediately.
Notes
Do not pierce the brat casings to retain juices. Keep the braising liquid at a gentle simmer to prevent splitting. If using pre-cooked brats, skip the braising step and just grill with onions. For a non-alcoholic version, substitute beer with beef/chicken broth and apple cider vinegar.
