  • 1 cup (100g) fine blanched almond flour
  • 4 tablespoons (56g) unsalted butter, softened
  • 2 tablespoons (24g) granulated erythritol or monk fruit blend
  • 1 teaspoon ground cinnamon
  • 4 ounces (113g) full-fat block cream cheese, softened
  • 2 tablespoons (30ml) heavy cream
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon sweetener (for topping)
  • 1/2 teaspoon cinnamon (for topping)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a small bowl, combine almond flour, softened butter, 2 tablespoons sweetener, and 1 teaspoon cinnamon. Mix until it resembles wet sand.
  3. Press the almond flour mixture firmly and evenly into the bottom of the prepared pan to form a solid base.
  4. In a separate bowl, whisk softened cream cheese, heavy cream, vanilla extract, and a pinch of salt until smooth and lump-free.
  5. Pour the cream cheese mixture over the base and spread evenly.
  6. Mix the remaining 1 tablespoon sweetener with 1/2 teaspoon cinnamon and sprinkle evenly over the cream cheese layer.
  7. Use a knife or offset spatula to gently drag through the layers in a zigzag pattern to create a swirl effect.
  8. Bake for 25-30 minutes until edges are golden brown and the center is set but still jiggles slightly.
  9. Cool completely in the pan on a wire rack for at least 30 minutes to allow the bars to firm up.
  10. Lift out using parchment overhang, place on a cutting board, and slice into squares.

Notes

Ensure cream cheese and butter are at room temperature for smooth mixing. Do not overbake as almond flour dries out quickly. Bars must cool completely before slicing to hold their shape. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
