- 1/2 cup (128g) creamy natural peanut butter
- 1/4 cup (30g) granulated keto-friendly sweetener (e.g., erythritol or monk fruit blend)
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- Cooking spray (for greasing)
- Optional: 2 tablespoons dark chocolate chips (85% cocoa) for drizzle
Instructions
- Let the cream cheese sit at room temperature for 20-30 minutes to soften. Line a mini muffin tin with parchment paper squares or lightly spray with cooking spray.
- In a medium bowl, combine the softened cream cheese, peanut butter, sweetener, vanilla extract, and salt.
- Beat the mixture with an electric hand mixer on medium speed for 1-2 minutes until completely smooth and creamy. Alternatively, mix vigorously with a spoon until no streaks remain.
- Using a small cookie scoop or tablespoon, fill each cup of the mini muffin tin about 3/4 full. Do not pack down; just drop the mixture in.
- Place the tin in the freezer for at least 1 hour, preferably 2 hours, until the fat bombs are completely solid.
- Pop the frozen fat bombs out of the tin. Serve immediately or store in an airtight container in the freezer for up to 3 months.
- Optional: For a chocolate drizzle, melt dark chocolate chips with a teaspoon of coconut oil, place in a ziplock bag with the corner snipped, and drizzle over the solid fat bombs.

Ensure cream cheese is fully softened to avoid lumps. Natural peanut butter can vary in consistency; if too runny, chill briefly before mixing. Store in an airtight container to prevent freezer burn and absorption of odors. These are dense; stick to 1-2 per serving.
