  • 3 medium zucchini (about 600g)
  • 5 tablespoons unsalted butter (divided)
  • 68 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth (low-sodium)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Prep the zucchini by washing, trimming ends, and spiralizing into noodles or cutting into ribbons. Pat dry with paper towels to remove excess moisture.
  2. Pat the shrimp dry with paper towels and season with salt and pepper.
  3. Heat a large skillet over medium-high heat with 1 tablespoon of olive oil. Add shrimp in a single layer and cook for 1-2 minutes per side until pink. Remove shrimp from pan and set aside.
  4. Reduce heat to medium. Add 4 tablespoons of butter to the same skillet. Once melted, add minced garlic and red pepper flakes. Stir constantly for 30-60 seconds until fragrant but not brown.
  5. Pour in chicken broth and lemon juice. Simmer for 1-2 minutes to reduce slightly. Add Italian seasoning and stir.
  6. Add zucchini noodles to the skillet and toss in the sauce for 2-3 minutes until wilted and tender-crisp.
  7. Return the cooked shrimp to the skillet. Remove from heat and sprinkle with Parmesan cheese. Stir until melted.
  8. Taste and adjust salt and pepper. Serve immediately with lemon wedges and fresh parsley if desired.

Notes

Do not overcook the shrimp as they will continue to cook when returned to the pan. Ensure zucchini noodles are patted dry to prevent sogginess. Use fresh garlic for best flavor. If using frozen shrimp, thaw and pat dry thoroughly. This dish is best served fresh; freezing is not recommended as zucchini noodles become watery upon thawing.
