Ingredients
- 1.5 pounds chicken breast tenders
- 2 large eggs + 1 egg yolk
- 2 tablespoons water
- 1 cup freshly grated Parmesan cheese
- 1/2 cup fine almond flour
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon dried parsley
- Kosher salt and black pepper to taste
- 2–3 tablespoons avocado oil or olive oil
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire cooling rack on top.
- In a shallow bowl, mix the grated Parmesan cheese, almond flour, garlic powder, onion powder, dried parsley, salt, and pepper.
- In a second shallow bowl, whisk together the eggs, egg yolk, and water.
- Dredge each chicken tender in the egg wash, allowing excess to drip off, then press firmly into the parmesan mixture to coat all sides.
- Place the coated tenders on the wire rack, ensuring they are not touching to allow for airflow.
- Lightly brush the tops of the tenders with avocado oil.
- Bake for 15-18 minutes until the coating is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
- Remove from oven and let rest for a few minutes before serving to maintain crispiness.
Notes
Grate your own Parmesan cheese to ensure proper crisping, as pre-grated cheese contains anti-caking agents. Use a wire rack to prevent the bottom from getting soggy. For extra crispiness, an air fryer can be used at 375°F for 8-10 minutes. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven or air fryer to restore texture.
