A comforting, one-pot meal featuring tender chicken thighs and pillowy dumplings in a rich, creamy gravy, ready in under an hour using an Instant Pot.

- 1.5 lbs boneless, skinless chicken thighs
- 3 cups low-sodium chicken broth
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 tablespoons butter
- 3 tablespoons all-purpose flour (for gravy)
- ½ cup heavy cream (for gravy)
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 cups all-purpose flour (for dumplings)
- 1 tablespoon baking powder
- 1 teaspoon salt (for dumplings)
- ¾ cup cold heavy cream (for dumplings)
- 1 tablespoon dried parsley
- ½ teaspoon garlic powder
Instructions
- Set Instant Pot to ‘Sauté’ mode. Melt butter and sauté diced onion and carrots for 4-5 minutes until soft.
- Add chicken thighs, chicken broth, thyme, salt, and pepper. Scrape the bottom of the pot to deglaze.
- Secure lid, set valve to ‘Sealing’, and pressure cook on High for 10 minutes.
- While cooking, prepare dumpling dough by whisking flour, baking powder, salt, garlic powder, and parsley. Stir in cold heavy cream until a shaggy dough forms. Do not overmix.
- Perform a Quick Pressure Release. Open lid.
- If gravy is thin, stir in a slurry of 3 tablespoons flour and cold water. Turn on ‘Sauté’ for 2-3 minutes to thicken.
- Turn off heat. Drop dollops of dumpling dough into the hot broth. Cover (do not seal) and steam for 12-15 minutes until a toothpick comes out clean.
- Stir in frozen peas and let sit for 2 minutes to warm through. Adjust seasoning and serve.
Notes
Do not overmix the dumpling dough to ensure they remain tender. Keep the heavy cream for the dumplings cold to help them rise. Ensure the bottom of the pot is deglazed to prevent burn errors. This dish is best served fresh; freezing is not recommended as dumplings may become mushy.
