- 4 large eggs (about 200g)
- 1 cup cottage cheese (225g, small curd)
- 2 tablespoons milk
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup shredded cheddar cheese (50g)
- ¼ cup cooked crumbled bacon (30g)
- ¼ cup chopped fresh spinach (15g)
Instructions
- Preheat oven to 325°F (160°C). Line a 12-cup mini muffin tin with silicone cups or grease lightly with cooking spray.
- Add eggs, cottage cheese, milk, salt, and pepper to a blender. Blend on high for 30-45 seconds until completely smooth and liquidy with no visible curds.
- Stir in shredded cheddar, crumbled bacon, and chopped spinach by hand with a spatula until evenly distributed.
- Ladle the mixture into the prepared muffin cups, filling each about ¾ full.
- Bake in the center of the oven for 18-20 minutes, or until tops are set, slightly golden, and a knife inserted into the center comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing.
Notes
Ensure cottage cheese is blended until completely smooth to avoid curds. Do not overbake as eggs continue to cook after removal from the oven. These can be stored in the fridge for up to 5 days or frozen for up to 3 months.
