Ingredients
- 1 ½ cups old-fashioned rolled oats
- ½ cup almond butter (natural, stirred well)
- ½ scoop vanilla protein powder (whey isolate or casein)
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- ¼ cup dark chocolate chips
- Pinch of salt
Instructions
- Ensure almond butter is well-stirred and softened; measure out all ingredients.
- In a medium mixing bowl, combine the rolled oats and protein powder, stirring to distribute evenly.
- Add the almond butter, maple syrup, and vanilla extract to the dry ingredients. Mix until a dough-like consistency forms that holds together when pinched.
- Fold in the dark chocolate chips gently to keep them chunky.
- Scoop about 1 tablespoon of dough and roll into balls between your palms. Place on a parchment-lined baking sheet.
- Chill in the refrigerator for at least 30 minutes to firm up before serving.
Notes
If the dough is too dry, add more almond butter or maple syrup. If too sticky, add more oats. For a nut-free version, substitute almond butter with sunflower seed butter. Ensure oats are certified gluten-free if necessary. These can be stored in the fridge for up to a week or frozen for up to 3 months.
