  • 2 tablespoons taco seasoning
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained slightly
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons fresh lime juice
  • 1 teaspoon hot sauce
  • Salt and pepper to taste
  • 1/4 cup water or beef broth

Instructions

  1. In a small bowl, whisk together sour cream, lime juice, hot sauce, and a pinch of salt. Set aside.
  2. Heat a 12-inch skillet over medium-high heat. Add ground beef and break into small crumbles. Cook for about 8 minutes until no longer pink. Drain excess fat if necessary.
  3. Add diced onion to the beef and cook for 2-3 minutes until soft. Add minced garlic and cook for 1 minute more.
  4. Stir in taco seasoning and cook for 1 minute to toast the spices. Add diced tomatoes, black beans, and corn. Pour in 1/4 cup water or broth.
  5. Simmer for 3-4 minutes until the liquid reduces and ingredients are heated through. Taste and adjust salt.
  6. Remove skillet from heat. Sprinkle shredded cheddar evenly over the top. Cover with a lid for 2 minutes to melt the cheese.
  7. Serve immediately, topped with the lime crema and optional garnishes like cilantro or avocado.

Notes

Use fresh lime juice for best flavor. Shred cheese from a block for better melting. This recipe is naturally gluten-free if using certified gluten-free taco seasoning. Do not freeze as dairy may separate.
