Description

A beginner-proof, sweet and savory grilled chicken skewer recipe featuring tender chicken, caramelized pineapple, and a homemade teriyaki glaze.

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 medium fresh pineapple, cut into 1-inch chunks (or one 20oz can of chunks, drained well)
  • 810 wooden skewers (soaked in water for 30 minutes if using wood)
  • ½ cup soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 teaspoon sesame oil
  • Sesame seeds for garnish (optional)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes. Preheat grill to medium-high heat (400°F / 200°C).
  2. Cut chicken breasts and pineapple into 1-inch cubes.
  3. In a small saucepan, whisk together soy sauce, brown sugar, apple cider vinegar, ginger, garlic, and sesame oil. Bring to a simmer over medium heat.
  4. Whisk in the cornstarch mixture and stir constantly for 1-2 minutes until the sauce thickens and becomes glossy. Remove from heat.
  5. Thread chicken and pineapple onto skewers, alternating pieces. Do not pack too tightly.
  6. Place skewers on the preheated grill. Cook for 4-5 minutes on the first side.
  7. Flip skewers, brush generously with the teriyaki glaze, and cook for another 3-4 minutes, flipping once more and brushing again.
  8. Ensure chicken reaches an internal temperature of 165°F (74°C) and pineapple is caramelized.
  9. Remove from grill and let rest for a couple of minutes. Sprinkle with sesame seeds and serve immediately.

Notes

If using canned pineapple, drain and pat dry to prevent skewers from sliding apart. Do not overcrowd the grill to ensure proper charring. Never reuse marinade that touched raw chicken; use a separate batch for basting or boil the marinade first to kill bacteria. Chicken thighs can be used as a substitute but may require 1-2 minutes longer cooking time.
