Ingredients
- 1.5 pounds flank steak or sirloin, cut into 1-inch cubes
- 1 large red bell pepper, cut into 1-inch squares
- 1 large red onion, cut into wedges
- 1 medium zucchini, cut into half-moons
- ½ cup balsamic vinegar
- ⅓ cup raw honey
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 4 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon freshly cracked black pepper
- ½ teaspoon red pepper flakes
- 1 tablespoon neutral oil (for brushing grill)
Instructions
- Slice the steak against the grain into 1-inch cubes.
- In a large bowl, whisk together balsamic vinegar, honey, soy sauce, minced garlic, grated ginger, black pepper, and red pepper flakes until the honey is dissolved.
- Add the steak cubes to the marinade, toss to coat, cover, and refrigerate for 15 minutes (do not exceed 30 minutes).
- While the steak marinates, prepare the vegetables: cut bell pepper and red onion into 1-inch squares, and zucchini into half-moons.
- Preheat grill to medium-high heat (400-450°F). If using wooden skewers, soak them in water for 30 minutes.
- Thread the ingredients onto skewers, alternating steak, pepper, onion, and zucchini. Leave space between pieces.
- Brush grill grates with neutral oil to prevent sticking.
- Place skewers on the grill and cook for 4-5 minutes on the first side without moving them to allow char marks to form.
- Flip skewers, brush generously with remaining marinade, and grill for another 4-5 minutes on the second side until steak reaches desired doneness (130°F for medium-rare).
- Remove skewers from grill and let rest for 3-5 minutes before serving.

Slice steak against the grain for tenderness. Do not marinate longer than 30 minutes as the acid can make the meat mushy. Watch for flare-ups from the honey and move skewers to a cooler part of the grill if needed. Rest the meat for 3-5 minutes to retain juices. For a gluten-free version, substitute soy sauce with tamari.
