Ingredients

  • 3 large medium zucchini (about 1.5 lbs / 700g)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese (50g)
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Wash and dry zucchini thoroughly. Using a vegetable peeler, slice zucchini lengthwise into ¼-inch thick planks. Discard ends.
  2. Optional but recommended: Sprinkle raw zucchini planks with salt and let sit for 10 minutes to draw out moisture, then pat dry with paper towels.
  3. In a small microwave-safe bowl, melt the butter. Stir in minced garlic, grated Parmesan, dried oregano, red pepper flakes, salt, and pepper until a thick paste forms.
  4. Preheat grill to medium-high heat (around 400°F / 200°C). Lightly oil the grill grates to prevent sticking.
  5. Place zucchini planks on the grill in a single layer. Grill for 3-4 minutes on the first side until grill marks appear and edges start to crisp.
  6. Flip planks carefully with tongs. Immediately brush the garlic Parmesan mixture generously onto the cooked side.
  7. Grill for another 2-3 minutes until the glaze is bubbly, golden, and slightly caramelized. Watch closely to prevent burning.
  8. Remove from grill and transfer to a platter. Sprinkle with fresh parsley and extra Parmesan if desired. Serve immediately.

Notes

Zucchini is 95% water, so salting and drying it beforehand is crucial to prevent steaming and ensure proper charring. Do not use jarred garlic as it has a metallic taste. Use freshly grated Parmesan for better melting. If grilling indoors, a cast-iron skillet can be used as an alternative. Do not freeze leftovers as the texture becomes watery.
