- 8 ears of corn, husks and silk removed
- 16 slices thick-cut bacon
- 1/2 cup (115g) unsalted butter, room temperature
- 1 large lime (zest and juice)
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Fresh cilantro, chopped (optional garnish)
Instructions
- Preheat grill to medium-high heat (around 400°F / 200°C).
- Pat the shucked corn ears dry with a paper towel to ensure crispy bacon.
- Wrap two slices of bacon around each ear of corn, spiraling from top to bottom and overlapping slightly to secure.
- In a small bowl, mix the room temperature butter, lime zest, lime juice, chili powder, and garlic powder until smooth.
- Place the wrapped corn on the oiled grill grates. Close the lid and cook for 15-20 minutes, turning every 5 minutes to ensure even cooking and prevent burning.
- Remove corn from grill and let rest for 2 minutes.
- Slather each ear of corn generously with the chili lime butter and serve immediately.
Notes
Dry the corn thoroughly before wrapping to prevent steam from making the bacon soggy. Use thick-cut bacon for better texture. If the bacon burns before the corn is tender, move to indirect heat or tent with foil. The chili lime butter can be made ahead and stored in the fridge for up to 2 days.
