Description
A quick, no-bake dessert featuring warm, cinnamon-spiced apples topped with a crunchy almond and oat mixture. This gluten-free and dairy-free recipe is ready in under 15 minutes.
Ingredients
Scale
- 4–5 medium apples (mix of Granny Smith and Honeycrisp), chopped into ½-inch cubes
- 1 cup certified gluten-free rolled oats
- ½ cup smooth, natural almond butter
- ¼ cup melted coconut oil
- 3 tablespoons pure maple syrup
- 2 teaspoons ground cinnamon
- 1 teaspoon pure vanilla extract
- ½ teaspoon salt
- ¼ cup chopped almonds (toasted optional)
- Optional: ¼ cup dark chocolate chips
Instructions
- Wash, core, and chop apples into ½-inch cubes. Place in a large microwave-safe bowl.
- Sprinkle apples with 1 tablespoon maple syrup and ½ teaspoon cinnamon. Toss to coat.
- Cover loosely and microwave on high for 4 minutes. Stir, then microwave for another 2-4 minutes until tender but not mushy.
- While apples cook, mix oats, almond butter, melted coconut oil, remaining maple syrup, remaining cinnamon, vanilla, salt, and chopped almonds in a small bowl until it resembles wet sand.
- Remove apples from microwave and spread topping evenly over the hot apples.
- Microwave again for 1-2 minutes to warm the topping.
- Let cool for 5 minutes to allow topping to crisp up. Serve warm.
Notes
Use firm apples like Granny Smith or Honeycrisp to prevent mushiness. Do not over-microwave apples as they continue to cook after removal. For best texture, store topping separately and mix before serving. Toasting almonds adds depth of flavor.
