  • 1 teaspoon vanilla extract
  • 1 cup (170g) dark chocolate chunks (60-70% cacao)
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. In a large mixing bowl, peel and mash the ripe bananas, leaving some small chunks for texture.
  3. Add the melted butter, eggs, sugar, and vanilla extract to the bananas. Whisk until smooth.
  4. In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula until just combined. Do not overmix.
  6. Fold in the dark chocolate chunks, reserving a small handful to sprinkle on top.
  7. Pour batter into the prepared pan, smooth the top, and sprinkle reserved chocolate on top.
