Ingredients
- 1.5 pounds fresh green beans
- 4–5 cloves garlic, minced
- 3 tablespoons unsalted butter
- 1 tablespoon extra virgin olive oil
- 1/2 cup slivered or sliced almonds
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon freshly cracked black pepper
- 1 teaspoon lemon juice (optional)
Instructions
- Wash the green beans thoroughly and trim off the stem ends. Pat them completely dry with a paper towel to ensure proper sautéing.
- Heat a small dry skillet over medium heat. Add the almonds in a single layer and toast for 2-3 minutes until golden brown and fragrant. Transfer to a plate to cool and set aside.
- In a large skillet, heat the olive oil and butter over medium-high heat until the butter foams and subsides.
- Add the minced garlic and stir constantly for 30-60 seconds until fragrant but not browned.
- Add the green beans to the skillet and toss to coat in the garlic butter. Let them sit for 1 minute to develop color, then stir and sauté for 7-9 minutes until crisp-tender and bright green.
- Reduce heat to medium-low. Sprinkle with salt and black pepper, tossing to distribute. Add lemon juice if using, and toss one final time.
- Remove from heat and transfer to a serving dish. Sprinkle the toasted almonds generously over the top and serve immediately.
Notes
Do not overcook the beans; they should remain crisp-tender. Toast almonds separately to prevent burning. Use fresh garlic for best flavor, as jarred garlic can taste metallic. If the beans stick, add a splash of water and cover briefly to steam, then uncover to crisp up. For a dairy-free version, swap butter for olive oil or vegan butter.
