A foolproof, crowd-pleasing recipe for loaded baked potatoes topped with smoky pulled pork, sharp cheddar, and sour cream. Perfect for game day, this dish is affordable, customizable, and requires minimal effort.
Ingredients
- 4 large Russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 2 cups shredded pulled pork
- ½ cup BBQ sauce
- 1.5 cups sharp cheddar cheese, shredded
- 4 stalks green onions, sliced
- ½ cup sour cream
Instructions
- Preheat oven to 400°F (200°C).
- Scrub potatoes clean and pat dry. Rub lightly with olive oil and sprinkle generously with kosher salt.
- Poke holes all over each potato 5-6 times with a fork to allow steam to escape.
- Place potatoes directly on the oven rack or on a lined baking sheet.
- Bake for 45-60 minutes until tender when squeezed gently. For extra crispy skin, broil for the last 2-3 minutes.
- While potatoes bake, warm pulled pork and BBQ sauce in a saucepan or microwave until hot and saucy.
- Remove potatoes from oven and let cool for 2-3 minutes.
- Slice a slit down the center of each potato (about 3/4 through) and gently press ends to open. Fluff the inside flesh with a fork.
- Spoon warm pulled pork into the center of each potato and drizzle with BBQ sauce.
- Top with shredded cheddar cheese. If desired, return to oven for 1-2 minutes to melt cheese.
- Finish with sliced green onions and a dollop of sour cream before serving.
Notes
For crispy skin, do not wrap potatoes in foil during baking. If making ahead, bake potatoes in advance and keep warm in a 200°F oven. Do not freeze loaded potatoes as sour cream may break; freeze plain baked potatoes instead. Ensure potatoes are fluffed before adding toppings to help them stick.
