  • 1 cup (240ml) full-fat canned coconut milk
  • 23 tablespoons (30-45ml) freshly squeezed lime juice
  • 24 tablespoons (30-60ml) simple syrup, honey, or agave
  • 1 cup (120g) ice (only if strawberries are not frozen solid)
  • 1 fresh strawberry slice (for garnish)
  • 1 tablespoon toasted coconut flakes (for garnish)
  • 1 lime wheel (for garnish)
  • 23 fresh mint leaves (for garnish)

Instructions

  1. If using fresh strawberries, wash, hull, and freeze them on a baking sheet for at least 4 hours or overnight.
  2. Measure out the coconut milk, lime juice, and sweetener before starting.
  3. Add frozen strawberries, coconut milk, lime juice, and sweetener to a high-speed blender.
  4. Blend on low speed to break up the fruit, then gradually increase to high. Blend for 30-60 seconds until smooth and creamy.
  5. Taste the mixture and adjust sweetness or tartness by adding more syrup or lime juice as needed.
  6. If the mixture is too thick, add a splash of water or more coconut milk. If too thin, add more frozen strawberries or ice.
  7. Pour into chilled glasses.
  8. Garnish with a strawberry slice, lime wheel, toasted coconut flakes, and mint leaves.
  9. Serve immediately while frozen.

Notes

Use frozen strawberries for the best slushy texture; fresh strawberries will make the drink watery unless frozen beforehand. Chill glasses in the freezer before serving to keep the drink cold longer. Toast coconut flakes in a dry pan for 2-3 minutes for added crunch and flavor. Adjust sweetness based on the natural sweetness of the strawberries.
