Ingredients
- 2 cups frozen pineapple chunks
- 1 can (400ml) full-fat coconut milk
- 1 cup ice (optional, only if pineapple is not frozen solid)
- 1 tablespoon lime juice (optional)
- 1/2 teaspoon coconut extract (optional)
- 2 ounces white rum (optional, for adult version)
Instructions
- If using fresh pineapple, chop into chunks and freeze for at least 4 hours. If using frozen pineapple, ensure chunks are separated.
- Add frozen pineapple chunks to a high-speed blender.
- Pour in the coconut milk. Add lime juice or coconut extract if using.
- Start blending on low speed, gradually increasing to high. Blend for 60-90 seconds until completely smooth and thick.
- Taste the mixture. Adjust sweetness with honey/agave or tartness with lime juice if needed.
- Pour immediately into tall glasses.
- Top with coconut cream or toasted coconut flakes if desired. Serve immediately with a wide straw.
Notes
For the best texture, ensure the pineapple is frozen solid. Using fresh pineapple with ice will result in a watery consistency. Full-fat canned coconut milk is required for creaminess; carton coconut milk is too thin. Serve immediately as the smoothie melts quickly.
