- 1 cup whole milk ricotta cheese (240g)
- 1 small lemon (zest and juice)
- 4–6 medium fresh figs
- 3 tablespoons honey

- Fresh mint or basil for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a small bowl, mix ricotta cheese with lemon zest and 1 teaspoon of lemon juice until smooth. Season with a tiny pinch of salt if desired.
- Unroll puff pastry on a lightly floured surface. Trim edges if necessary and place on the prepared baking sheet.
- Prick the center of the pastry with a fork, leaving a 1-inch border around the edges to create a well.
- Dollop the ricotta mixture onto the center and spread into an even layer within the border.
- Wash, dry, and stem the figs. Cut larger figs in half or quarters. Arrange them on top of the ricotta in a circular pattern.
- Fold the edges of the pastry over the filling, pleating as you go to create a rustic look.
- Drizzle honey generously over the entire tart, ensuring it gets into the folds.
- Bake for 20-25 minutes until the pastry is golden brown and puffed, and the honey is bubbling. Cover edges with foil if browning too quickly.
- Cool on the baking sheet for 10 minutes to allow the ricotta to set. Sprinkle with flaky sea salt and fresh herbs before serving.

Keep the puff pastry cold until baking to ensure it puffs properly. Do not overfill the tart to prevent sogginess. Let the tart cool for at least 10 minutes before cutting to allow the ricotta to set. For a gluten-free version, use gluten-free puff pastry. For dairy-free, substitute ricotta with cashew-based ricotta and honey with maple syrup.
