  • 2 cups (400g) light brown sugar, packed
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups (340g) butterscotch chips
  • Flaky sea salt (like Maldon) for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Melt the butter in a microwave-safe bowl in 30-second intervals, stirring until just melted and warm. Let it cool slightly.
  3. In a large mixing bowl, whisk the melted butter, light brown sugar, and granulated sugar vigorously for about a minute until glossy and sticky.
  4. Add the eggs and vanilla extract to the butter mixture and whisk until smooth and combined.
  5. Add the flour, baking powder, and salt to the wet ingredients. Mix gently with a wooden spoon or spatula until just combined. Do not overmix.
  6. Fold in the butterscotch chips, reserving a small handful for topping if desired.
  7. Spread the thick dough evenly into the prepared pan.
  8. Bake for 25-30 minutes. The edges should be golden brown and pulling away from the sides, while the center looks slightly soft and underbaked.
  9. Immediately upon removing from the oven, sprinkle flaky sea salt over the top.
  10. Let cool in the pan for at least 15 minutes before lifting out using the parchment overhang and cutting into squares.

Notes

Do not overbake; the center should look slightly underbaked when removed from the oven as they firm up while cooling. Use room temperature eggs to prevent scrambling. For cleaner cuts, chill the blondies in the fridge for an hour before slicing. Add flaky salt immediately after baking so it sticks to the warm surface.
