A creamy, spicy, and savory buffalo chicken dip inspired by family tradition. Made with rotisserie chicken, sharp cheddar, and hot sauce, this appetizer is perfect for game day parties and feeds a crowd.

- 3 cups shredded chicken (rotisserie or poached)
- 8 oz full-fat cream cheese, softened to room temperature
- 1/2 cup (120ml) hot sauce (e.g., Frank’s RedHot)
- 1/4 cup (57g) unsalted butter
- 3 cloves garlic, minced
- 1 packet (1 oz) dry ranch dressing mix
- 2 cups shredded sharp cheddar cheese
- 1/4 cup (60ml) blue cheese dressing (optional)
- 2–3 green onions, sliced
- 1/2 cup extra shredded cheddar cheese for topping
Instructions
- Preheat oven to 350°F (175°C).
- Shred the chicken and set aside. Grate the cheddar cheese yourself for better melting.
- In a large skillet over medium-low heat, melt the butter. Add minced garlic and sauté for 30 seconds until fragrant.
- Add the softened cream cheese chunks to the skillet. Stir gently until mostly melted.
- Pour in the hot sauce and whisk until the mixture is smooth and glossy.
- Remove skillet from heat. Stir in the ranch dressing mix, blue cheese dressing (if using), and shredded chicken. Mix until chicken is evenly coated.
- Transfer the mixture to a 9×9 inch baking dish and spread evenly.
- Sprinkle the 2 cups of shredded cheddar cheese evenly over the top.
- Bake for 20-25 minutes until the cheese is melted, bubbly, and spotted with golden brown.
- Optional: Broil for the last 2 minutes for a crispier crust, watching closely to prevent burning.
- Remove from oven and let cool for 5 minutes.
- Garnish with sliced green onions and serve warm with tortilla chips, celery sticks, or crackers.
Notes
Ensure cream cheese is softened to room temperature to avoid lumps. Use fresh garlic and grate your own cheese for the best texture. If serving at a party, transfer to a slow cooker after baking to keep warm. Do not freeze as dairy may separate.
