Football Game Day Pinwheel Sandwiches with Bacon Ranch Cream Cheese

  • Author: Maya
  • Total Time: 43 minutes
  • Yield: 24 pinwheels 1x

Description

These savory pinwheel sandwiches feature a creamy bacon ranch cream cheese filling rolled into soft tortillas with cheddar, green onions, and tomatoes. They are perfect for game day because they require zero cooking during the event and can be made ahead of time.

Ingredients

Scale
  • 4 large flour tortillas (12-inch)
  • 8 ounces full-fat cream cheese, softened
  • 1 packet (1 ounce) dry ranch dressing mix
  • 810 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 45 stalks green onions, thinly sliced
  • 1 medium tomato, seeded, diced, and patted dry

Instructions

  1. Cook bacon in the oven at 400°F for 15-18 minutes until crisp. Let cool completely and crumble into bite-sized pieces.
  2. Slice green onions and dice tomatoes. Pat tomatoes dry with a paper towel to remove excess moisture.
  3. In a medium mixing bowl, combine softened cream cheese and dry ranch seasoning. Stir until smooth and fully incorporated.
  4. Lay tortillas flat. If stiff, microwave with a damp paper towel for 10-15 seconds to soften.
  5. Spread the ranch cream cheese mixture over each tortilla, leaving a ½-inch border on the edges.
  6. Sprinkle shredded cheddar cheese evenly over the cream cheese.
  7. Scatter crumbled bacon, sliced green onions, and diced tomatoes over the cheese layer.
  8. Starting from one long edge, roll the tortilla up tightly, tucking in the filling as you go.
  9. Wrap each roll tightly in plastic wrap, twisting the ends like a candy wrapper to secure.
  10. Refrigerate for at least 2 hours or overnight to firm up.
  11. Unwrap rolls and slice into ½-inch to 1-inch thick pinwheels using a sharp or serrated knife.
  12. Arrange on a platter and garnish with extra green onion tops or bacon if desired.

Notes

Ensure all vegetables, especially tomatoes, are completely dry to prevent soggy tortillas. The rolls must be chilled thoroughly before slicing to ensure clean cuts. Do not freeze these as the texture will suffer.
