Description
Easy, make-ahead breakfast bars that are tender, chewy, and packed with blueberries. Perfect for busy mornings, these bars require no mixer and can be prepped the night before.
Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 cup Greek yogurt (plain, non-fat or 2%)
- 1 teaspoon vanilla extract
- 1 1/2 cups frozen blueberries
- 1 teaspoon flour (for tossing blueberries)
- 1 lemon, zested (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large mixing bowl, whisk together the oats, flour, baking powder, baking soda, and salt until combined.
- In a separate bowl or measuring cup, whisk the melted butter, sugar, egg, yogurt, and vanilla extract until smooth and creamy.
- Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined; the batter will be thick and sticky.
- Toss the frozen blueberries in a teaspoon of flour to prevent sinking, then gently fold them into the batter.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with moist crumbs.
- Let the bars cool in the pan for at least 30 minutes to firm up.
- Lift the bars out using the parchment paper and slice into squares.
Notes
Do not use instant or steel-cut oats; old-fashioned rolled oats are required for the correct texture. Do not thaw the blueberries before adding them. Tossing frozen berries in a little flour prevents them from sinking to the bottom. Cool completely before slicing to ensure they hold together. Can be stored at room temperature for 3 days, in the fridge for 1 week, or frozen for 3 months.
