A hearty, nutritious, and visually stunning breakfast hash made with crispy sweet potatoes, savory bacon, and fresh spinach, ready in just 20 minutes.

- 2 medium sweet potatoes (about 1 lb / 450g), diced into ½-inch cubes
- 1 medium yellow onion, diced
- 1 medium red bell pepper, diced
- 2 tablespoons avocado oil or olive oil
- Salt and black pepper to taste
- 4–6 slices bacon, chopped (about 150g)
- 3 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- ½ teaspoon smoked paprika
- 4 large eggs
- 2 cups fresh spinach, packed
- ½ cup feta cheese, crumbled (optional)
- Fresh parsley for garnish
Instructions
- Dice the sweet potatoes, onion, and bell pepper. Mince the garlic and chop the bacon.
- Heat a large skillet over medium heat. Add the chopped bacon and cook until crispy, rendering the fat. Remove bacon with a slotted spoon, leaving the fat in the pan.
- Add the diced sweet potatoes to the hot bacon fat. Season with salt and pepper. Let cook undisturbed for 3-4 minutes to form a crust, then stir and continue cooking for 6-8 minutes until tender and crispy.
- Add the onion and bell pepper to the pan in the last 5 minutes of potato cooking.
- Add the minced garlic, chopped rosemary, and smoked paprika. Stir constantly for 30-60 seconds until fragrant.
- Toss in the fresh spinach and cook for another 30 seconds until wilted.
- Make four small wells in the hash. Crack an egg into each well. Cover the pan and cook over low-medium heat for 3-4 minutes until whites are set but yolks are runny.
- Sprinkle with crumbled feta and reserved bacon. Garnish with fresh parsley and serve immediately.
Notes
Do not crowd the pan to ensure potatoes crisp up rather than steam. Cut potatoes uniformly for even cooking. Use the rendered bacon fat for flavor. Eggs can be fried separately if preferred. This recipe is naturally gluten-free, but check bacon labels for fillers. Can be made ahead by cooking hash without eggs and spinach up to 2 days in advance.
