Description

  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon espresso powder

  • 1/2 cup salted caramel sauce
  • 1 cup mini marshmallows
  • 2 tablespoons heavy cream
  • 1 tablespoon powdered sugar
  • Flaky sea salt (for garnish)

Instructions

  1. Pour whole milk into a small saucepan and heat over medium-low heat until small bubbles form around the edges (about 5 minutes). Do not boil.
  2. Reduce heat to low. Add chocolate chips, cocoa powder, espresso powder, and sugar (if using). Whisk constantly for 2-3 minutes until the chocolate is completely dissolved and the mixture is glossy.
  3. Remove saucepan from heat. Stir in vanilla extract and salted caramel sauce until fully incorporated. Taste and adjust sweetness or salt if desired.
  4. In a microwave-safe bowl, combine mini marshmallows and heavy cream. Microwave on high for 30 seconds, stir, then microwave for another 15-20 seconds if needed until smooth. Fold in powdered sugar.
  5. Pour hot chocolate into mugs, leaving space at the top. Spoon a generous dollop of the warm marshmallow mixture onto each drink.
  6. Using a culinary torch held 6 inches away, toast the marshmallow topping until golden brown spots appear. Alternatively, broil for 1-2 minutes, watching closely.
  7. Immediately sprinkle with flaky sea salt and serve while hot.

Notes

Do not boil the milk as it can scorch and alter the texture. Use a whisk instead of a spoon to prevent lumps. The marshmallow topping hardens as it cools, so assemble and serve immediately. For dairy-free, use oat milk and dairy-free chocolate chips.
