Description
A stress-free, no-cook (mostly) fall charcuterie board featuring spiced candied pecans, artisan cheeses, cured meats, and seasonal fruits. Perfect for holiday parties or last-minute entertaining.

- 2 cups raw pecan halves
- 3 tablespoons real maple syrup
- 2 tablespoons unsalted butter
- 1 teaspoon ground cinnamon
- ½ teaspoon pumpkin pie spice
- ½ teaspoon sea salt flakes
- 1 small wheel Brie or Camembert (about 8oz)
- 6oz Sharp Cheddar, cubed or sliced
- 6oz Smoked Gouda, sliced
- 6oz Prosciutto or Salami
- 1 box sturdy crackers (e.g., water crackers or sesame seed)
- 1 cup fresh figs (halved) or grapes
- 2 medium apples (Honeycrisp or Fuji), sliced
- ½ cup dried apricots or cranberries
- 2 tablespoons honey
Instructions
- Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- In a small saucepan over medium heat, melt the butter. Add maple syrup, cinnamon, pumpkin pie spice, and sea salt. Stir until smooth and bubbly.
- Pour pecans into the saucepan and stir vigorously until evenly coated in the syrup mixture.
- Spread coated pecans in a single layer on the prepared baking sheet. Bake for 8-10 minutes until caramelized and fragrant. Do not let them pile up.
- Remove from oven and let cool completely on the pan until hardened.
- While pecans cool, slice apples and toss with a little lemon juice to prevent browning. Halve figs and wash grapes.
- Arrange the Brie wheel on a large board or platter. Place piles or slices of Cheddar and Smoked Gouda nearby.
- Fold prosciutto into nests or roll salami slices and place near the cheeses.
- Fan out or stack crackers in the empty spaces on the board.
- Scatter apple slices, figs, grapes, and dried fruit around the board for an organic look.
- Generously sprinkle the cooled candied pecans over the board.
- Drizzle honey over the Brie.
- Add small bowls with olives or pickled onions for height and variety.
- Let the board sit at room temperature for 15-20 minutes before serving to allow cheese to soften.
Notes
Ensure cheese is at room temperature before serving for best flavor. Candied pecans can be made up to 1 week ahead. Do not freeze the assembled board. If apples brown, keep them in lemon water until assembly.
