Description
A refreshing, low-calorie summer mocktail made with just a few simple ingredients: cucumber, fresh mint, lime, and sparkling water. It’s crisp, fizzy, and perfect for hot days.

- 1 large English cucumber (about 300g), sliced into thin rounds
- 1 large handful fresh mint leaves (about 15–20 leaves)
- 2 medium limes (about 60ml juice)
- 2 cups (480ml) chilled plain sparkling water
- 1–2 tablespoons simple syrup or honey (optional)
- Ice cubes (large cubes preferred)
- Pinch of sea salt (optional)
Instructions
- Rinse the cucumber under cold water and pat dry. Slice into thin rounds or half-moons.
- Place fresh mint leaves in the bottom of a tall glass.
- Squeeze the juice of one lime directly over the mint (about 30ml).
- Add simple syrup or honey if using.
- Gently muddle the mint and lime juice to bruise the leaves and release oils, being careful not to shred them.
- Fill the glass to the top with ice cubes.
- Tuck cucumber slices in between the ice cubes.
- Slowly pour chilled sparkling water over the ice to preserve carbonation.
- Garnish with a sprig of fresh mint and extra cucumber slices.
- Give a gentle stir and serve immediately.
Notes
Use English cucumbers for thinner skin and fewer seeds. If using regular cucumbers, peel and remove seeds. For parties, make the cucumber-mint-lime mixture ahead and add sparkling water just before serving to keep it fizzy. A pinch of salt enhances the flavor. Large ice cubes melt slower and prevent dilution.
