Description
A refreshing, hydrating summer drink made with just cucumber, honeydew, and lime. This simple agua fresca is kid-approved, low-calorie, and ready in minutes.
Ingredients
Scale
- 2 large English or Persian cucumbers (about 600g), chopped
- 1 medium honeydew melon (about 800g flesh), cubed
- 4–6 cups cold water
- 2 limes, juiced
- 1–2 tablespoons honey or agave (optional)
- 1 cup fresh mint leaves (optional)
- 1–2 cups ice
Instructions
- Wash cucumbers thoroughly. If using English cucumbers, leave skin on; if using regular cucumbers, peel them first. Cut cucumbers into chunks.
- Cube the honeydew melon, removing the rind and seeds. Chop mint leaves if using.
- Add cucumber chunks, honeydew cubes, lime juice, mint (if using), 4 cups of water, and honey (if using) to a blender.
- Blend on high for 45-60 seconds until the mixture is completely smooth and pale green. Add more water if too thick.
- Place a fine-mesh strainer over a large bowl or pitcher. Pour the blended mixture into the strainer.
- Use a spoon to press down on the pulp to extract the liquid, discarding the fibrous pulp.
- Taste the strained liquid and adjust sweetness with more honey or tartness with more lime if needed.
- Pour into a pitcher, add ice, and chill in the fridge for at least 30 minutes before serving.
- Serve in tall glasses garnished with cucumber slices or lime.
Notes
Chill ingredients before blending for a colder drink. Do not skip straining to avoid a gritty texture. Use ripe honeydew for best sweetness. A pinch of salt enhances flavor. Can be made sparkling by replacing half the water with sparkling water after straining.
