A quick, no-cook lunch idea featuring large flour tortillas layered with ranch dressing, crunchy vegetables, and cheese, rolled into easy-to-eat spirals.
Ingredients
- 3 large flour tortillas (12-inch / 30cm)
- 1/2 cup (120ml) ranch dressing
- 1 cup (100g) shredded carrots
- 2 cups (60g) baby spinach or shredded lettuce
- 1 medium cucumber (about 150g), diced or julienned
- 1/2 cup (75g) cherry tomatoes, halved (optional)
- 1/2 cup (50g) shredded cheddar or Mexican blend cheese
- 2 tablespoons (20g) red onion, finely diced
- 1 tablespoon chopped fresh cilantro or parsley (optional)
- Cooked chicken or turkey (optional, 1 cup)
- Avocado slices (optional, 1)
- Bacon bits (optional, 1/4 cup)
Instructions
- Wash and thoroughly dry all vegetables. Pat spinach and lettuce dry with paper towels to prevent sogginess. Dice cucumber, halve tomatoes, and shred carrots if not pre-shredded.
- Lay tortillas flat on a cutting board. If cold, let them sit at room temperature for 5 minutes to prevent cracking.
- Spread 2-3 tablespoons of ranch dressing evenly over each tortilla, leaving a 1-inch border at the far edge.
- Layer fillings in the center: start with leafy greens, then shredded carrots, diced cucumber, red onion, and finally sprinkle cheese on top. Keep layers thin and even.
- Lift the edge of the tortilla closest to you and fold it over the fillings, tucking it in tightly. Fold the left and right sides inward like a burrito to seal.
- Roll the tortilla up tightly from the bottom, applying gentle, even pressure to create a snug roll.
- Wrap each spiral tightly in plastic wrap or parchment paper. Chill in the refrigerator for at least 15 minutes to firm up.
- Remove wrap and slice each roll into 3-4 spirals using a serrated knife or pizza cutter at a slight angle.
- Serve immediately or pack for lunch.
